Hi Rose,

Yes, bamboo is a very good material for cutting boards for several reasons.
First, it is harder than maple but not so hard that it will dull your knives. It is generally much better to use a cutting board that has a hard surface rather than a material like pine that sucks up liquid like a sponge. I also like the fact that bamboo is a fast growing grass which can be quickly re-grown. I
use a bamboo cutting board in my house everyday and really like it. I think you will too.
