I really like using diamond sharpening steels. They take a little practice but as long as you keep the angle consistent they work.

Thanks for your prompt and informative reply. Do you have a recommendation for a sharpener, preferably a manual two stage, ceramic or diamond, and not a stone, for German knives?

I recommend you use the sharpener on Global Knives only. You can use it on German style knives but it will sharpen them on a steep angle which is not how they are beveled in the first place.

To whoever may respond:
Your ad copy for the Mino Sharp Plus says it is “... a universal sharpener suitable for all knives”. I have both European and Global knives and want to make sure this sharpener will work for (not damage) the European knives. I have heard from sources that have said, as you say, “it will work for European knives” and some who have said “it won’t”. Please clarify; I prize all my knives and wish to keep all in sharp shape!
